Nutritional Yeast Vinaigrette + Heirloom Bean Bowl

Nutritional Yeast might be the best tasting ingredient with the worst name! Whatever the case, this is a new fave dressing that can help you create a memorable bean bowl with whatever ingredients you have on hand. 

 

Ingredients

Dressing
  • 1 cup Nutritional Yeast
  • 1/3 cup apple cider vinegar
  • 1/3 cup Tamari
  • 1 clove garlic
  • 1/2 teaspoon sesame oil
  • 1/3 cup neutral oil (avocado, grapeseed...)

Combine all the ingredients together, except for the oil. Blend in an immersion blender and then slowly add the oil to emulsify. If you don't have an immersion blender, throw it all together in a high powered blender and call it a day:)

Bean Bowl

  • 1 cup cooked beans (Rio Zape shown here)
  • 1 cup Brussels Sprouts, halved and roasted
  • 1 sweet potato, cubed and roasted
  • 1 cauliflower, cut and roasted
  • 1 cup chopped red cabbage, chopped
  • 1/2 small red onion, finely chopped
  • 1 cup arugula
  • Top with roasted sunflower seeds, microgreens, etc

 

Cooking Instructions

  1. Heat oven to 375 degrees. Add roasting vegetables (Brussels Sprouts, Potatoes, Cauliflower) to a parchment lined baking sheet and drizzle with olive oil. Roast in the oven until browned and tender. 
  2. Chop other vegetables (cabbage, red onion), leave these raw
  3. Add the arugula to a bowl along with the raw and roasted vegetables. Sprinkle with sunflower seeds.  
  4. Top with dressing. Mix and serve!
