Take some grains + greens + BEANS + veggies + seeds and throw it all in a bowl. Top with an awesome dressing and you'll have endless meal possibilities. As much as we'd like to say it's about the beans, here It's really ALL about the dressings.
Here are a few of our faves (all vegan + gluten free!):
1. Lemon Tahini Dressing

- 1/4 cup tahini
- 4 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 2 teaspoons maple syrup
- 1/4 teaspoon fine sea salt
- 3 tablespoons ice-cold water
- Optional: 1 teaspoon of sesame oil
Add all the ingredients together and whisk until thick.
No blender required, which puts this at #1 on our list.
SUGGESTED BEAN PAIRING: Garbanzo beans
2. Green Tahini Dressing (aka Cilantro-lime Dipping Sauce)

- 1/4 cup tahini
- 2 limes, juiced
- 1/4 cup water (or olive oil)
- 1 bunch cilantro
- 1/2 tsp salt
Add all ingredients into a blender and mix until smooth. Super easy.
SUGGESTED BEAN PAIRING: Black beans

3. Apple-Cider Vinaigrette

- 4 tablespoons apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1 teaspoon maple syrup
- 1 teaspoon Dijon mustard
- 1 clove of garlic, grated
- 1/4 teaspoon sea salt
- Freshly ground black pepper
Whisk all ingredients together until smooth.
SUGGESTED BEAN PAIRING: Any heirloom variety
4. Carrot Miso Dressing

- 1 cup carrots, peeled and roughly chopped
- 4 scallions, white parts only, sliced (or 1 shallot)
- 2 tablespoons roughly chopped fresh ginger
- 1 tablespoon sweet white miso paste
- 2 tablespoons rice wine vinegar
- 1 tablespoon toasted sesame oil
- 1/4 cup grapeseed oil
- 3 tablespoons water
Add all ingredients into a high speed blender and mix until smooth.
SUGGESTED BEAN PAIRING: Garbanzo or Cannellini beans

5. Cashew Caesar

- 1 cup raw cashews, soaked overnight
- 1/2 cup water
- 4 tablespoons extra-virgin olive oil
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 small garlic clove
- 4 teaspoons capers
- 1 teaspoon fine grain salt (Save until the end)
Drain soaked cashews and rinse. Add to a blender with all other ingredients and blend until smooth. Add more water as needed.
SUGGESTED BEAN PAIRING: Roasted Garbanzo beans

6. Nutritional Yeast Vinaigrette

- 1 cup Nutritional Yeast
- 1/3 cup apple cider vinegar
- 1/3 cup tamari
- 1 clove of garlic
- 1/2 teaspoon sesame oil (optional)
- 1/3 cup neutral oil (avocado, grapeseed...)
Combine all the ingredients together, except for the oil. Blend in an immersion blender and then slowly add the oil to emulsify. If you don't have an immersion blender, throw it all together in a high powered blender and call it a day:)

7. Sweetgreen-Inspired Spicy Cashew Dressing

- 1 cup cilantro
- 1 garlic clove
- 1 1/2 inch piece of fresh ginger, peeled
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1 tablespoon rice wine vinegar
- 1 teaspoon chili flakes
- 1/2 cup of roasted cashews
- 1/2 limed, juiced
- 1 teaspoon salt
- 1/4 cup water
Combine all the ingredients together in a high-speed blender. Taste and adjust as desired.
SUGGESTED BEAN PAIRING: Any heirloom variety
8. Creamy ACV Vinaigrette

- 1/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup
- 1 tablespoon tahini
- 1 clove garlic
- 1/2 teaspoon salt
- Pepper
Combine all the ingredients together in a high-speed blender. Taste and adjust as desired.
SUGGESTED BEAN PAIRING: Organic Heirloom Mixed Beans
9. Shallot Vinaigrette

- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon sherry vinegar
- 1 shallot, finely minced
- 1/2 teaspoon salt
Whisk all the ingredients together in a bowl. Taste and adjust as desired.
SUGGESTED BEAN PAIRING: Add to a little gem salad along with roasted chickpeas or Tahini Roasted Beans
