Huevos Rancheros

Beans for breakfast! This recipe takes a bit of prep, but is easy to make and a total crowd pleaser. 

Ingredients

Pico de Gallo

    • 1 1/2 cups of fresh tomatoes, finely chopped 
    • 1/4 cup onion, finely chopped
    • 1 small garlic clove, grated
    • 1/2 teaspoon jalapeño, finely chopped 
    • 1 lemon, juiced (about 2 tablespoons)
    • 1/4 teaspoon fine salt

Add more or less ingredients as you see fit, depending on the number of eggs you're making. 

Refried Beans

    • 2 teaspoons olive oil
    • 1/4 cup onion, finely chopped
    • 1 small garlic clove, grated
    • 1 teaspoon ground cumin
    • Optional: 1/8 teaspoon smoked paprika 
    • 2 cups cooked black beans 
    • 1/4 cup water 
    • 1 tablespoon lime juice
    • Chopped cilantro

Organic Eggs 

    • This recipe is suited for 4 eggs. 

 

Cooking Instructions

  1. Heat your oven to 400 degrees (If baking tortillas. If just warming in a skillet, ignore this step). 
  2. Make the Pico de Gallo, by chopping the tomatoes, onion, jalapeño and putting in a bowl. Add grated garlic, lemon juice, and salt. Add to a medium sized saucepan (the same one where you'll be cooking the beans) and cook on med heat until the tomatoes soften and a sauce starts to form. Transfer to a bowl and cover, to keep warm. 
  3. Cook the beans. In the same saucepan where you cooked the tomatoes, heat olive oil over medium heat. Add the onions and cook until translucent (~ 5 min). Add the grated garlic, cumin, and salt. Stir constantly until fragrant (~30 sec). Then add the cooked black beans and water. Stir all together and cook on medium heat for about 5 min. Reduce the heat to low and mash with a potato masher or fork. Once the beans are at your desired consistency, remove from the heat and stir in the lime juice and some chopped cilantro. Cover until you're ready to serve.
  4. Cook the corn tortillas. If using pre-made tortillas, place the tortillas on a baking sheet and drizzle with some olive oil. Use your hands to coat the surface evenly. Bake in the oven until crispy (~3 min). Alternatively, you can warm the tortillas in a skillet on the stove top. If you're feeling really ambitious, make your own tortillas with masa harina flour and a press. This will definitely elevate your meal! 
  5. Fry your eggs. Add 1 tablespoon of olive oil to a stainless steel frying pan. Let the oil heat up before adding the eggs. Then crack your eggs into the pan without breaking the yokes. Cook until the whites are set and the yolk is done to your liking. Typically 3-4 minutes. 
  6. Assemble your dish: Top each baked or warmed corn tortilla with some refried beans. Then add a fried egg on top. Spoon over some tomato salsa, avoiding the yoke. Sprinkle with chopped cilantro and ground pepper and salt. Add whatever other garnishes you like (avocado, pickled onions...).
