Curried Chickpea Sandwich

Lunch time has been given an upgrade! Mash up some chickpeas with some crunchy celery, onion, and spices for a simple, satisfying sandwich or salad option. 

 

Ingredients

    • 1 1/2 cup cooked garbanzo beans (aka chickpeas), slightly mashed
    • 1/4 cup red onion, finely chopped
    • 1 celery stalk, finely chopped
    • 1 garlic clove, minced
    • 1/4 cups tahini
    • 1 teaspoon curry
    • 1/2 lemon
    • Optional: chopped cilantro, sriracha and maple syrup

  1. Mash the chickpeas to a consistency you like and mix everything together. Seriously. That's it! 

 

The only part of this recipe that involves some muscle is mashing the chickpeas. But once made, this is a totally satisfying, filling lunch - and you can get creative with ingredients. Add some sriracha for spice or mix up some other spices like cumin and paprika for some added depth of flavor.
