Cilantro Lime Rice + Beans

The ultimate comfort food in our homes is a simple bowl of rice and beans. We're constantly tweaking our recipes, but keep coming back to this basic blend finished with some lime and cilantro. 

 

Ingredients

    • 2 tablespoons olive oil
    • 1 small onion, diced (save some for garnishing)
    • 2 cloves of garlic, minced (~ 2 teaspoons)
    • 1 1/2 cups long grain white rice, uncooked
    • 1 teaspoon ground cumin
    • Salt and pepper
    • 3 cups water (or broth)
    • 3 cups of black beans, cooked 
    • 2 tablespoons lime juice (add zest if want more flavor)
    • 1/3 cup cilantro, chopped

 

Steps

1. 

 

Heat olive oil in a large pot. Add chopped onion and saute until translucent. Add garlic and cook for another minute or so. Then add the rice and stir to coat. Add the cumin and salt and stir some more. Add the water or broth and bring to a boil. Reduce heat to a simmer, cover, and cook, undisturbed, for 15 minutes or so, until the rice is cooked through.

Once the rice is cooked, fluff with a fork. Then add the lime juice (add some lime zest for extra flavor, if you want) and chopped cilantro. Blend together. Add the beans to the rice and mix together. Cover the pot, and let sit off heat for 10 minutes before serving.  

That's it. Top with avocado, chopped tomatoes, diced onion, or whatever additions you crave.
