Black Bean and Mango Salad

It's hard to even call this recipe a "recipe". Literally throw the ingredients in a bowl, add lime juice, olive oil, and salt as a dressing and mix it up! It's super easy and delicious - perfect for a low maintenance summer salad. 

 

Ingredients

    • 2 cups cooked black beans
    • 1 avocado, cubed
    • 1 mango, cubed
    • 1 small red onion, diced
    • 1 small jalapeno, finely chopped
    • 1/2 cup cilantro, chopped
    • Juice from 1 lime
    • 2 tablespoons good quality olive oil
    • Flaky sea salt

Add the ingredients to a large salad bowl. Top with the lime juice, olive oil, and flaky sea salt. Mix together. That's it!
