Here's a super easy, family favorite recipe that offers a riff on your classic "chicken parm" dish - by making beans the hero.
Ingredients:

- Olive oil
- 1 medium onion, finely diced
- 2 garlic cloves, finely minced
- 2 cups Lacinto kale (stems removed and leaves coarsely chopped)
- 1 sprig fresh rosemary, leaves removed and finely chopped
- ¼ teaspoon salt (optional)
- ¼ teaspoon chili flakes
- Few grinds of freshly ground pepper
- 3 cups cooked beans (mild variety, like Beanstory Peruano beans)
- 24 oz jar of Marinara sauce (Ciao Pappy, Marinara Alla Pappy)
- Several slices of fresh mozzarella (about 5 ounces)
- Freshly grated parmesan to sprinkle on top
- Fresh basil leaves for garnish

- Preheat oven to 375 degrees F.
- Place a large, oven-proof skillet on the stovetop and set to Medium heat. Add olive oil and onions; saute the onions until they are translucent (~3 minutes)
- Add the garlic, rosemary, and kale to the onions, stirring occasionally until the kale is slightly wilted (~2 minutes).
- Add the cooked beans along with salt, chili flakes, and a few grinds of pepper.
- Pour the marinara sauce over the bean mixture and mix all together.
- Top the dish with the fresh mozzarella slices, along with some grated fresh parmesan.
- Bake in the oven, uncovered, until the cheese turns golden (~30 minutes).
- Remove from the oven and add torn, fresh basil leaves as garnish. Serve immediately.
