The classic 3 bean salad gets a modern make-over. Using our Organic Heirloom Bean Mix with 7 delicious heirloom varieties, this salad is easy to devour.
Ingredients:

- 1 cup dried Organic Heirloom Beans (yields 3 cups of cooked beans)
- 1/2 cup celery, chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup parsley, chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup
- 1 tablespoon tahini
- 1 clove garlic
- 1/2 teaspoon salt
- Pepper

- Cook the beans until tender, as per standard cooking instructions. Drain and rinse the beans and then place them in a large bowl.
- Add chopped celery, chopped red onion, and chopped parsley to the beans.
- Make the vinaigrette by adding the olive oil, apple cider vinegar, dijon mustard, maple syrup, tahini, garlic, salt and pepper to a high speed blender. Mix until the dressing has emulsified. Taste and adjust as desired.
- Pour the dressing over the bean salad and toss to coat.
Eat immediately or store in the fridge for up to five days.
