Seven Bean Salad

 

The classic 3 bean salad gets a modern make-over. Using our Organic Heirloom Bean Mix with 7 delicious heirloom varieties, this salad is easy to devour.

Ingredients:

    • 1 cup dried Organic Heirloom Beans (yields 3 cups of cooked beans)
    • 1/2 cup celery, chopped
    • 1/4 cup red onion, finely chopped
    • 1/2 cup parsley, chopped
    • 1/4 cup extra virgin olive oil
    • 1/4 cup apple cider vinegar
    • 1 tablespoon dijon mustard
    • 1 tablespoon maple syrup
    • 1 tablespoon tahini
    • 1 clove garlic
    • 1/2 teaspoon salt
    • Pepper

 

Directions:

    1. Cook the beans until tender, as per standard cooking instructions. Drain and rinse the beans and then place them in a large bowl.
    2. Add chopped celery, chopped red onion, and chopped parsley to the beans. 
    3. Make the vinaigrette by adding the olive oil, apple cider vinegar, dijon mustard, maple syrup, tahini, garlic, salt and pepper to a high speed blender. Mix until the dressing has emulsified. Taste and adjust as desired. 
    4. Pour the dressing over the bean salad and toss to coat.

Eat immediately or store in the fridge for up to five days.
