There are so many different ways to dress up beans, but for a completely basic, no fuss option, simple beans marinated in oil and vinegar hit the spot every time. 




  • 3 cups cooked beans (preferably warm) = ~1 cup dried beans
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons raw apple cider vinegar
  • 1/2 teaspoon fine sea salt







Follow standard bean cooking instructions (for stovetop, cover beans with 2 inches of water, bring to a boil, simmer and cook until tender. More here). 



Put cooked beans in a bowl, add oil, vinegar, and salt. If you have time, let them sit for 30 min to marinate or...just eat!

That's it. You're DONE! You can keep these in the fridge for up to 4 days, but we doubt they'll last that long.
