It is ridiculously rare to find big white runner beans that are not only grown in the U.S., but grown organically. To find these magical beans, we drove through Redwood forest, across river banks, and over a plank-laid bridge, to emerge in an oasis of fruit trees and dry farmed bean fields. This special varietal is harvested by hand and in limited supply. Once they're gone, they'll be gone until the next harvest season. 

Our favorite way to cook these beans is simmering with some onion, garlic, lemon, and herbs in a big pot of brothy beans.

These white runners hit all the right notes. They're creamy and satisfying and cook consistently. I am a plant-forward chef educator and often teach my students to cook with legumes. I will absolutely be recommending them. They're a great starter bean and will convert any bean skeptic. Is there a subscription option? Or can I buy them buy the case? I want to have a stash of them at all times so I can eat them on repeat and gift them.

These were the best white beans! I soaked, and cooked as "brothy beans", served them with some farrow and wilted greens and a touch of grated pecorino. Delicious dinner! But almost better were the leftovers... the beans got even better the next day... tender, not mushy at all, and so flavorful!

Wonderful fresh beans!

I ordered three types of dried beans from Beanstory and have so far cooked the white runner beans. They were wonderful! Creamy and flavorful. I can’t wait to try the other two types! (Zuni Gold and Peruano)
